This enzyme converts normally unfermentable dextrins into sugars that yeast can use. To produce a dry beer it should be added along with the yeast.
It can also be used to dry out stuck fermentations or over sweet beer in which case it should be stirred gently into the beer. Fermentation should restart with 24 hours.
